This is a delicacy that underlines the fine cuisine of the Piedmont region of Italy. The "Martin Sec" is a small, crisp pear variety. The tree-ripened fruits are carefully harvested by hand in the orchards of the Roero and Langa hills. Whole pears are cooked and preserved in a full-bodied red wine along with aromatic spices. It is served as a side with hearty meals but is also delicious on its own as a dessert. A real treat for gourmets!
